 Twisted Tuna Melts
We love these with crisp cucumber rounds lightly tossed in french dressing.
2 cans chunk white tuna, drained well 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1/8 teaspoon ground cumin 1 TBSP pickle relish 1 TBSP horseradish sauce (with mayo)
8 slices bread of choice 4 slices cheese of choice (I use Swiss)
Mix tuna with garlic, onion, cumin, relish and horseradish sauce. Taste and adjust seasonings to your taste.
Divide tuna evenly onto 4 slices of bread, top with cheese and another slice of bread.
Grill on lightly oiled surface until golden and hot.

I don’t think it’s a matter of “is it coming.” I think that it’s already here, it’s just a matter of perspective. From one perspective, our frog friends are telling us that we should be grateful that the “spa” is hot and luxurious. From the cook’s perspective… another 10 minutes and we’ll be dinner.

I like to mix a can of tuna with some Hidden Valley Spicy Ranch dressing. The kids are hooked on it. We need more tuna recipes, I'm sure we all have 400 cans of tuna stashed somewhere, right? I've got a really good one, I'll see if I can find it. I actually wrote the Betty Crocker Cookbook people because they left this tuna recipe out of the new edition, and they actually sent me a copy of it! Nice, huh? I'll look for it, it's great over toast.
