Post Turkey and Broccoli Casserole
A good way to use up some of the holiday leftovers. We love parsleyed, buttered noodles with this.


4 TBSP butter
1/3 cup flour
1 cup milk
1 cup chicken broth
pinch of ground nutmeg
1/3 cup grated Swiss cheese
3-4 cups cooked broccoli
1 1/2 cups cooked turkey, cubed
1/4 cup grated Parmesan cheese

Heat oven to 350. Spray casserole dish with non stick spray.

In saucepan, melt butter. Add flour, stirring, and cook about 1 minute. Remove from heat and gradually add milk and broth, stirring constantly and remving any lumps. Return to heat and cook, stirring constantly, until thickened. Gradually add Swiss cheese, stirring to melt evenly. Add a pinch of nutmeg.

Layer broccoli in casserole. Top with 1/2 of the sauce. Layer turkey over broccoli and top with remaining sauce. Sprinkle Parmesan evenly over all.

Bake until browned and bubbly, about 1/2 hour.
