 Tortillas
These are the easiest and tastiest tortillas, if the most non traditional. They are soft and pliable, even when cold, and will stay fresh 5 days in the fridge, if you can keep them that long!
2 cups all purpose flour 1/4 cup lard (can use shortening, but lard is best) 1/2 teaspoon salt 1/2 teaspoon baking powder 3/4 cup warm milk
Combine dry ingredients and cut in lard until mix is grainy. Add milk and mix to form a dough. Knead dough about 5 mins until no longer sticky.
Divide dough into 12 equal pieces, roll each piece into a ball, cover and let rest 30 mins.
Roll each ball into a 6 inch circle.
Heat griddle or large skillet over med-high heat until hot. Cook tortillas until lightly browned and puffed, flip and cook other side until lightly browned. Place tortillas in a clean towel while cooking the others.
