 Spaghetti Carbonara
Simple ingredients (bacon, eggs, cheese, salt and pepper) are tossed with pasta to make a creamy sauce. Fast, easy and "molto bene".
1 pound spaghetti 1/2 pound bacon 4 eggs 3/4 cups pecorino-romano cheese (can use Parmesan) 1/2 TBSP frsh ground black pepper, or to taste salt to taste optional: 1/4 cup heavy cream for added creaminess (not traditional)
Cook pasta according to directions.
While pasta water is coming to a boil, cook bacon until crisp in large pan. Remove bacon to paper towels and reserve about 1 TBSP of bacon grease in pan. Crumble bacon.
In bowl, beat eggs, cheese and black pepper together. (Add cream if using)
When pasta is cooked, drain and add to sautee pan. Pour egg mix over pasta and toss well. Add bacon pieces, season with salt to taste, add more black pepper if desired. Toss well again.
