Sauerkraut-How much cabbage?

 Sauerkraut-How much cabbage?My cabbage didn't do anything this year but I'm considering trying to make sauerkraut.
A friend goes into the city and gets produce. I was going to have him get me a case (or 2) of cabbage. There is @10-12 heads/case. Any idea how much a case (or 2) would make? I don't have a crock but do have food grade plastic buckets. I saw that you could put garbage bags with water on top for weight and it would also seal the edges. Also, any favorite recipes? |

Re: Sauerkraut-How much cabbage? I can't be much help, but there is one fact that must be observed,
Cleanliness, to the point of sterilizing every thing everything that touches the cabbage. Helped my Mother make it, and it always seemed quite a job, bruising or pounding the cabbage to free enough juice to put it in jars, have to top it off with a little brine. She fermented hers in quart mason jars, and every once in a while, one would explode It turned out pure white, except a little on top. If you want to taste something approaching as good as Mothers, buy Claussens in the refrigerator pickle section of the store. Delicious |

Reuben sammiches, hot dogs, pizzas, with fried potatoes and smoked sausage, hot dog and sauerkraut pizza, eating with dumplings, and more. My own invention. Its great ! Actually, sauerkraut is great on every kind of pizza I've tried it on. When I order a Godfather's Combo (everything), I have them put sauerkraut on it. Re: Sauerkraut-How much cabbage? I couldn't get enough cabbage to make my own, so until next year I determined to get some at the store. Found it today at 59 cents a can...bought 24 cans, so I'm set.
According to what I have read about making it, you just keep shredding until you fill the buckets. |
