hello all,
i have a question for the board....i have a buddy that lives alone and buys bulk frozen vegetables
and he can't eat all of them....he throws alot of it away...
he wants to know if there some way to save them or to can them?
i told him to get some freezer bags and spilt them up the cook what he eats....
can anyone help with some new ideas.....

Sure, there's plenty you can do!
First of all, why throw away frozen food? Frozen food is good forever, if you keep it frozen. Freezer burn can make it taste bad, but it won't kill you, and vacuum sealing (or put it in a ziploc and roll the ziploc bag as you close it to get all the air out) will keep freezer burn away.
You can also dehydrate, it takes up less space (a 1 lb tub of fresh spinach takes up about 1/3 of a SMALL ziploc bag when it's been dehydrated and crushed!) You can just keep it in a cool dry place, and as long as it has less than 13% moisture, it will stay good. You can dehydrate in an oven, if it goes down to 125 or 135 degrees, or if it doesn't go that low you can dehydrate in a dehydrator or the sun. I've heard of people who use closed cars in summer to dehydrate their food.
You can also can it, but you'll need a pressure canner for everything but tomatoes. I love canning, I thought it would be hard and complicated but it's simple, and kind of fun.

Our favorite is dehydrating such things, It concentrates the flavor and is very easy to
rehydrate and cook.
If you are just starting out, get a cheap round dehydrator, and use websites as a guide
of how to do each different food.
Special techniques , such as blanching certain vegetables, or dipping them in a dilute
lemon juice in water mix to stop sliced veges from turning dark.
You 2 guys get together and make jerky, it's worth the cost of the dehydrator
for jerky alone.

But the best part about frozen foods is that they don't have to be blanched. (I hate blanching!) They're dehydrator-ready!

I dehydrate frozen veg..as stated.. there is no need to parboil or dip in lemon water etc..just dump and into the machine they go.. I also dehydrate canned veg to save space and weight
