 Focaccia
This is a great appetizer, or in my house, a meal when served with a salad. I bake it in the oven in winter, and on the grill in summer. Toppings are limited only by your imagination!
1 cup water 3 TPSP butter, cold and in small dice 3 cups AP flour 2 TBSP dry milk 3 1/2 TBSP sugar 1 tsp salt 1 1/2 tsp instant dried yeast
Combine all ingredients to form a rough dough. Knead dough until smooth and pliable. Place in oiled bowl and let rise until doubled.
Remove dough from bowl and knead 1 minute. Roll dough to approx 9x 15 inch rectangle. Place into greased 9x15 inch jelly roll pan and press evenly. Cover with plastic wrap and let rise another 20-30 minutes. Dimple dough with fingers, drizzle awith olive oil and top with favorite toppings.
Bake in preheated 400 degree oven 15-20 minutes, or grill in a preheated grill with lid closed 15-20 minutes. Times will vary according to toppings and cooking methods.
Our favorite toppings: Green onions salt, Parmesan cheese and olive oil; cooked Italian sausage, carmelized onions, red bell peppers and black olives with mozzarella; sliced fresh tomatoes, basil, mozzarella.
