We have these as patties placed on pitas, topped with finely diced tomatoes and cucumbers, drizzled with tahini and a pineapple chili sauce.

1 can chickpeas, rinsed and drained well
1 small onion
4-5 cloves garlic
1/2 cup fresh cilantro
1/2 cup fresh parsley
1 tsp baking powder
6 TBSPS flour
2 tsps cumin
1 tsp salt
1 tsp coriander
oil for pan frying

Place all ingredients in bowl of food processor. Process until smooth. Place in bowl, cover, and refrigerate at least 2 hours but no longer than 24 hours.

Form into patties and pan fry until crisp and hot.

Serve with pitas and topped as desired.

Falafel & Tabouli are two of my favorite veggie dishes. It is so hard to find the Tabouli ingredients in the local store especially the.

Fantastic! I already had the chickpeas draining and was about to make some, this version uses flour rather than bread crumbs which is what I have a the moment.
