 Eclair Cake with Chocolate Ganache
This sounds complicated, but is really pretty easy. Rich and delicious, just like an eclair. Be warned, it disappears fast!
Pastry: 1 cup water 1/2 cup butter 1/4 teaspoon salt 1 cup AP flour 4 eggs
Filling: 2 cups cold heavy whipping cream 2 TBSPS confectioners sugar 1 teaspoon pure vanilla extract 2 (3.5 oz) pkgs instant French Vanilla pudding mix (vanilla is ok) 2 cups cold milk
Ganache: 1 cup bittersweet chocolate, chopped scant cup heavy cream
Preheat oven to 400 degrees. Grease 9x13 inch baking dish.
Combine water, butter and salt in medium saucepan and bring to a boil. Reduce heat to medium and add flour. Cook and stir until mix pulls away from sides and forms a ball. Remove from heat and beat in eggs, 1 at a time, until well incorporated. Spread evenly in pan.
Bake until golden, about 25-30 mins. (dough will rise up but should "deflate" as it cools). Cool completely on wire rack.
In bowl, whip whipping cream until thickened. Add sugar and vanilla and continue to beat until stiff peaks form.
In bowl, combine pudding and milk. Stir until creamy. Fold in whipped cream. Spread evenly over cooled crust.
Place chocolate in heat proof bowl. Bring cream to a near boil in small saucepan. Pour hot cream over chocolate and whisk until melted and smooth. Cool about 10 mins then pour over cream filling, spreading evenly.
Chill at least 1 hr before serving.

Looking sounds good.I love cake especially chocolate cake.I will must be try this in home.I also found one cake recipe from weekly home magazine.I will be post next time here.

Here's an even easier method:
1 16 oz box graham crackers 2 boxes instant French Vanilla pudding mix 8 oz sour cream 1 12oz Cool Whip 3c cold milk 1 tub Betty Crocker chocolate frosting 1 12x9x2 disposable aluminum roasting pan
Blend pudding with milk, fold in Cool Whip and sour cream Place 1 layer crackers in pan, spread 1/3 pudding mix on top, alternating until you have 4 layers crackers/3 layers pudding. Finish with layer of whole graham crackers.
Remove foil cover from icing tub. Heat in microwave 1 minute. Stir. Pour over graham crackers top. Cover, refrigerate, and eat.
