I couldn't imagine these would be good, but they do not loose any flavor and the consistency is the same once rehydrated.

Pre cook and peel. Put on tray as you would for fruit leather or fruit rollups. When dry, break up into chip size and store in jars.

They rehydrate wonderful, add brown sugar and butter and microwave until hot.

Cooking for one is no fun. This is great for one person, just grab a few chips, rehydrate and ready to eat.

how thick do you make the slices? and do you dry till brittle or leather?

I did like leather. I put the cooked sweet potatoes through the blender to get all the lumps out and put it on sheet thin more like fruit rollup which is thinner than leather. Dried until I could pick it up and break into pieces. Sort of crackled on tray as it shrinks and cracks form where it was thinner.
