BORROWED FROM FRUGAL
Caramel Apple Jam

--------------------------------------------------------------------------------

6 cups peeled & diced apples

1/2 cup water

1/2 teasp butter

1 package Sure Gell

3 cups sugar

2 cups packed brown sugar

1/2 teasp cinnamon

1/4 teasp nutmeg

3-4 Tabsp.unsweetened Caramel Flavoring

Mix apples,water & butter. Cook over medium heat,stirring until apples are soft,but not mushy.Stir in pectin. Bring to a full boil,stirring constantly. Add sugars,cinnamon,nutmeg and caramel flavoring. Return to a rolling boil and and continue to boil stirring constantly for a couple of minutes,until thickens. Remove from heat. Pour into hot jars,leaving 1/4 inch headspace. Process in water bath for 10 minutes. Makes 7-8 half pints.

My family loves this in fried pies,with bread,or with ice cream. I get the Caramel Flavoring in the coffee section at WalMart. My relatives really like getting it for Christmas gifts also.

Wonder if you would get better caramel flavor if you used all brown sugar?
