6 medium yams, peeled, boiled, and cut legnth wise. Or you can use 2 lg. cans of store bought yams 1 box yellow cake mix with flour. 1 stick butter 1/2 -1 c chopped pecans 1 lg. can pineapple with juice 1 c brown sugar Greased cake pan
Mix cake mix, butter, and almonds and sprinkle 1/2 of the mixture in greased pan. Lay yams on top of cake mix mixture. Spread pineapple with juice over top of yams. Sprinkle brown sugar over pineapple. Sprinkle remaining cake mixture over brown sugar. Bake at 350 for 1 hour or until top is golden brown. You may add marchmellos but I find it makes it too rich.
This recipie is so easy. I never measure pecans or brown sugar....just eye ball it. I find it's easier to just mash the yams with my hands if I'm using the store bought yams.
