Perfect for summer grilling season. Can be cooked on a griddle or grill. We had these last night wrapped around shish ke bob. Delish!

1 1/2 cups white AP flour
1 1/2 cups whole wheat flour
2 tsps yeast
2 tsps sugar or honey
3/4 tsp salt
1 TBSP olive oil
1/4 cup plain yogurt
3/4 cup warm water (more if needed)

Combine all ingredients to form a soft dough. Turn onto lightly floured board and knead until smooth and elastic, about 5 mins.

Place dough into oiled bowl, cover with plastic wrap, and let rest 10 mins.

Divide dough into 8 pieces. Form each piece into a ball and roll into a circle about 8 inches in diameter.

Heat griddle or grill to high heat. Reduce heat to medium and cook each flatbread until just lightly browned, 1-2 mins. Flip bread and cook until lightly browned.

Stack cooked breads in a clean towel. Serve warm.

Can be made with all white flour.
