 APRICOT - ZUCCHINI JAM
APRICOT - ZUCCHINI JAM
6 c. peeled, ground zucchini 1 c. crushed pineapple, drained 1/2 c. lemon juice 1 pkg. pectin 3 c. sugar 1 (3 oz.) pkg. apricot Jello
Combine all ingredients except Jello. Bring to full boil and cook for 10 minutes. Stir and remove from heat. Add apricot Jello. Stir thoroughly. Pour in sterile jars and seal.

FAKE APRICOT JAM
6 c. peeled and seeded zucchini Sm. can crushed pineapple 1/4 c. lemon juice 1 pkg. M.C.P. pectin 5-6 c. sugar 1 (6 oz.) apricot Jello
Prepare the zucchini and place in large pan. Cook 1 hour. If cooking uncovered add small amount of water. If covered it does not need water. Add crushed pineapple juice and all. Add the lemon juice, boil. Add pectin and sugar; boil 6 minutes. Remove from heat add the apricot Jello. Stir well. Seal in hot jars.

ZUCCHINI JAM - APRICOT
6 c. zucchini, ground after removing seeds 6 c. sugar 1 c. pineapple, crushed with juice 1/2 c. lemon juice 1 lg. pkg. apricot Jello
Cook zucchini 6 to 10 minutes (add no water) until moist and shiny. Add sugar, pineapple, lemon juice and bring to boil for 6 minutes. Add 1 package of apricot Jello and boil 1 minute. Put into hot, clean jars and cover with melted paraffin or freeze after covering.

These sound very good..... except, do you have any without the pineapple ingredients?

That would be fantastic! Pineapple anything, even mixed with something- smell or taste, makes me throw up. No, seriously. Quit laughing, LOL

I for one would never laugh...(she, me who has death allergies to foods) Rubies thank you I have tons of jello prepped and should start using it up..I figured I could substitute it with pectin....pectin is so much more expensive then jello..and my theiry somethin is always better then nothin..lol

I don’t think it’s a matter of “is it coming.” I think that it’s already here, it’s just a matter of perspective. From one perspective, our frog friends are telling us that we should be grateful that the “spa” is hot and luxurious. From the cook’s perspective… another 10 minutes and we’ll be dinner.
